Breakfast, Lunch, Dinner, and Desserts!

I've dwindled down my posting to just memorable meals. We haven't actually done too much new or adventurous stuff the past couple weeks. But I do have some pics to share of some great and memorable foods.

First up is Salted Caramel Chocolate Chunk Fudge Brownies. I took my favourite fudgey brownie recipe and added chocolate chunks, then topped with caramel, a sprinkle of sea salt, and a thin layer of ganache.

The caramel was firm, but soft enough to ooze when the brownies were cut. It stretched like melted cheese. It was the absolute perfect consistency. They are rich and decadent.

Here's a meal that's not too special, but I love it. It's quick, cheap, and a comfort food. It's also one of my favourite ways to use up leftover potatoes and meats (usually breakfast sausage like in this case, or spicy sausage, bacon, deli meats, baked ham, even hot dogs would work). Basically, you take any combination of meat, potatoes, and onion, whatever you like, and fry them together, then scramble with eggs and top with shredded cheese if you like. It's kind of like a super lazy frittata.

This is something new to me. I wanted to make something simple yet hearty using leftover ham. I browned some butter with garlic and poured it over the cooked pasta. Then I sprinkled in some parmesan cheese and parsley. For something so simple, it packed a lot of flavour. I loved it. I've always loved browned butter, especially on popcorn. It has a nutty taste. My oldest, the pickiest, thought I was making a red sauce and was disappointed before she even tried it. My middle child didn't care for it either, but my baby loved it. My husband ate it without complaint. ha I might just add this to our regular dishes, and everyone will eventually love it too.

My husband had a birthday on the 21st! I made him an angel food ice cream cake. I made my own vanilla bean ice cream so that I could keep the calories down. I did a layer of ice cream and then a layer of lime whipped cream. I iced the outside of the cake with the rest of the lime whipped cream and then coated it in coconut. 

We served it with fresh fruit. Nice and light yet satisfies all your sweet tooth's cravings.
