Breakfast, Lunch, Dinner, and Desserts!

I've dwindled down my posting to just memorable meals. We haven't actually done too much new or adventurous stuff the past couple weeks. But I do have some pics to share of some great and memorable foods.

First up is Salted Caramel Chocolate Chunk Fudge Brownies. I took my favourite fudgey brownie recipe and added chocolate chunks, then topped with caramel, a sprinkle of sea salt, and a thin layer of ganache.

The caramel was firm, but soft enough to ooze when the brownies were cut. It stretched like melted cheese. It was the absolute perfect consistency. They are rich and decadent.

Here's a meal that's not too special, but I love it. It's quick, cheap, and a comfort food. It's also one of my favourite ways to use up leftover potatoes and meats (usually breakfast sausage like in this case, or spicy sausage, bacon, deli meats, baked ham, even hot dogs would work). Basically, you take any combination of meat, potatoes, and onion, whatever you like, and fry them together, then scramble with eggs and top with shredded cheese if you like. It's kind of like a super lazy frittata.

This is something new to me. I wanted to make something simple yet hearty using leftover ham. I browned some butter with garlic and poured it over the cooked pasta. Then I sprinkled in some parmesan cheese and parsley. For something so simple, it packed a lot of flavour. I loved it. I've always loved browned butter, especially on popcorn. It has a nutty taste. My oldest, the pickiest, thought I was making a red sauce and was disappointed before she even tried it. My middle child didn't care for it either, but my baby loved it. My husband ate it without complaint. ha I might just add this to our regular dishes, and everyone will eventually love it too.

My husband had a birthday on the 21st! I made him an angel food ice cream cake. I made my own vanilla bean ice cream so that I could keep the calories down. I did a layer of ice cream and then a layer of lime whipped cream. I iced the outside of the cake with the rest of the lime whipped cream and then coated it in coconut. 

We served it with fresh fruit. Nice and light yet satisfies all your sweet tooth's cravings.

Chicken Burgers

I usually make my famous Turkey Burgers, but minced chicken was on sale a couple weeks ago and that's what was in my freezer. They are amazing either way.



Topped with marbled cheddar and served on LARGE homemade whole wheat buns (I even tried to make the buns smaller this time, ha!) with my secret sauce.

Happy Easter!

I made a simple roast chicken for our Easter dinner. I sliced garlic and put it under the skin. I also cut a couple cloves in half and put them in the potatoes to boil, and then mashed them in with the potatoes. We also had some homemade rolls, gravy, and mixed vegetables.

Tonight's Dinner


 Maple Leaf - Santa Fe Marinate Chicken

I don't normally buy chicken breasts like these because they are expensive, but I got these on sale for 50% off so I couldn't resist. My husband BBQed them while I made white rice and marinated tomatoes.


We are out of fresh basil and feta cheese, so I had to change up my favourite way of doing them... Instead I used the last of my fresh cilantro and cubed some mozza.


I made Sour Cream Chocolate Chip Scones for dessert. My middle daughter has been asking for them for sometime now. There was a period not too long ago when I was making 2 batches a week! Charisma just loves these scones. So do I! They taste even better the next day.

Homemade Oreos!


I wanted to do some baking with my oldest daughter for Easter. Looking around my pantry and deciding what we could make, to my surprise, Serenity asked to bake cookies over cupcakes. She wanted to do some decorating with icing. We've done sugar cookies before and we end up with piles and piles of them. They're good, but I wanted a change. So I thought Oreos! The kids love chocolate and icing, who doesn't?!

Orange Beef on Brown Rice

We have been getting over one bug or another or another and are finally all back in good health. The only memorable meals from the last week are bean & veggie burgers, and a baked ham we had for my youngest daughter's first birthday.

I made an Orange Beef stir fry on Thursday and we had the leftovers last night. I couldn't find a recipe that was exactly what I was looking for (something using all of a fresh orange), so I just winged it. It was fantastic. This is a pic of the leftovers; it was much better than it looks.
